This was sooo delish! I used a few bunches of spinach and added 1/2 a can of green chile enchilada sauce and a couple of leftover chicken breasts I had from Chinese take out the night before. I also added leftover cornbread crumbs to the chicken and it was delish! I can't believe how much I was able to use up this soup in 1 day! Thank you!!!!!
Great recipe for a very quick weeknight meal! I used a 2 lb. bag of frozen green chile peppers and added a little more than the recipe called for for the spice. The original recipe called for more than I used and this was perfect!
I love this soup! It has the perfect balance of being healthy and flavorful! It is my go-to for when I am sick or just want to have a delicious comfort food that is healthy. I used chicken broth instead of water and I used green chiles and I couldn’t tell the difference in taste. I used three jalapeno peppers and the soup was super spicy.
